It is only on the holidays before the year ends that I get to flex my cooking muscle (hidden, if ever there is any).
I wanted to try a different texture using potatoes, not just the common cubed or chopped potatoes. So I got our cheese grater, the one which has different sizes of holes. I shredded one whole potato, leaving the skin on as they say it is healthier this way.
First, I sauteed minced garlic, chicharo, then added the pork slices. After letting it simmer, I added the shredded potatoes, a little bit of soy sauce and covered the pan. A few minutes later, I dumped the grated cheese along with the bell pepper. I let the cheese melt, then added a glass of water, in small portions.
What ensued was understandable (my aunt and tatay just couldn’t help themselves. hehe.) :
